Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pickled Oysters

Ingredients

Directions

Prepare the oysters

  1. Remove oysters from shells using a fork and place them in a vegetable dish.

  2. Slice the lemon and add it to the oysters with salt and red pepper.

  3. Stew the oysters until done.

  4. Remove the oysters with a skimmer and pour the stewing liquid into a pitcher.

Make the pickle

  1. In a saucepan, bring 1 pint of vinegar to a boil with cloves, mace, and allspice.

  2. Remove from heat and mix the spiced vinegar with the stewing liquid.

  3. Pour over the oysters.

  4. If the mixture does not cover the oysters, add ½ cup of cold vinegar and more stewing liquid to cover them well.

What each ingredient does

Oysters
Main ingredient that becomes tender when stewed and absorbs the spiced pickling liquid.
Vinegar
Provides the acidity that preserves and sharpens the flavour of the pickle.
Lemon
Adds bright acidity and aroma to the pickling liquid.
Allspice
Contributes warm aromatic flavour to the spiced vinegar.

The step that matters

Stew the oysters until done. Oysters overcook quickly and turn rubbery when held at a simmer too long, so they should be removed as soon as their edges curl and they are firm. Stopping at the right point keeps them tender before they soak up the vinegar.

Swap the mace

How well each one fits the dish's main ingredients (oyster, lemon, pepper, vinegar, clove, allspice):

  1. Marjoramfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against oyster, lemon, pepper, vinegar, clove, allspice. Candidates are from the same food group and used in at least 100 recipes.
