What each ingredient does

Hen
Provides the meat and rich stock that the dish is built around.
Gelatine
Sets the cooking liquid into a firm, sliceable jelly once chilled.
Hard boiled eggs
Add firm texture and a mild richness, and make a decorative ring when lined in the mould.
Lemon juice
Adds acidity that brightens the rich chicken and balances the seasoning.
Mustard
Adds sharp, pungent flavour that cuts through the richness of the meat.

The step that matters

Dissolve the gelatine in the boiling water. Gelatine must fully dissolve in hot liquid before cooling; undissolved granules leave gritty patches, and too little gelatine or too much water will stop the jelly from setting firmly.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (egg, lemon, mustard, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against egg, lemon, mustard, pepper. Candidates are from the same food group and used in at least 100 recipes.
