What each ingredient does
- Sirloin or rib roast
- Is the main meat, which browns on the outside and firms as it cooks.
- Water
- Creates moisture in the pan that becomes the gravy used for basting.
The step that matters
Add a little hot water to the pan as the gravy is used up. Hot water keeps the pan from drying out and scorching, and keeps the gravy usable for basting. Cold water would cool the pan and slow the cooking.
