To Cook Beefsteak
Ingredients
Directions
The book says “the hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.
Heat a thin, long-handled frying pan on the stove until very hot.
Add the pounded steak without any butter or salt.
Allow the steak to glaze over, then quickly turn it several times until cooked, about 4 minutes.
Transfer the steak to a warmed platter, add butter and salt, and place it in a hot oven (400°F / 200°C) for a moment on each side to retain juices.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
