What each ingredient does

Cantaloupe
Provides the fruit body that becomes tender and absorbs the sweet, spiced syrup.
Vinegar
Acidifies the fruit and helps preserve it while it soaks and cooks.
Sugar
Sweetens the pickle and, in a concentrated syrup, helps preserve the fruit.

The step that matters

Boil until the cantaloupe is tender. Cantaloupe softens slowly in hot syrup, and stopping early leaves firm, underdone pieces. Testing for tenderness with a fork ensures the pieces are cooked through and evenly translucent.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, sugar, nutmeg, clove, celery):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against vinegar, sugar, nutmeg, clove, celery. Candidates are from the same food group and used in at least 100 recipes.
