The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Forms the main body of the preserve, becoming translucent as it cooks in the syrup.
Sugar
Sweetens the preserve and, in a syrup, draws water out of the fruit to help preserve it.
Lemons
Add acidity and bright aroma, and their boiling water adds flavour to the syrup.
Ginger root
Adds a warm, spicy aroma that balances the sweetness of the syrup.

The step that matters

Cook the citron until transparent. Keeping the syrup at a gentle simmer lets sugar penetrate the citron slowly. Boiling too hard can break the fruit apart or leave it tough and cloudy rather than clear.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
