Brown Flour Mush
Ingredients
Directions
Make the mixture
Bring 2 pints of water to a boil in a kettle.
Mix a small amount of brown meal with cold water until thick, like starch.
Pour the mixture into the boiling water, stirring in more dry meal until thickened to a mush consistency.
Thin the mixture with more boiling water to a starch-like consistency.
Set and serve
Allow it to come to a boil again, then pour into molds.
Serve as you would cracked wheat.

What each ingredient does
- Brown meal
- Its starch thickens the mixture as it heats, giving the mousse its body and structure.
- Water
- Hydrates the starch so it can swell and gelatinize when heated, forming a smooth thickened base.
The step that matters
Pouring the cold-mixed meal into the boiling water. Starch must be fully dispersed and then heated to gelatinize. Adding the slurry too fast or without stirring forms lumps and uneven thickening, so stir steadily as it goes in.
