Why it works: Sauce and sugar match in chemistry and in kitchens. They rank in the top 13% of all ingredient pairs, and cooks put them together in 5,147 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Apple Meringue

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apple base

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix apple sauce, sugar, lemon juice and peel, flour, and egg yolks.

  3. Pour the mixture into a baking dish and bake until set.

Make and add the meringue

  1. In another bowl, beat the egg whites until soft peaks form.

  2. Gradually add 2 tablespoons of sugar and continue beating until stiff peaks form.

  3. Spread the meringue over the baked apple mixture.

  4. Brown the meringue in the oven for a few minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apple sauce
Provides the main moist, sweet fruit body of the filling.
Egg yolks
Enrich and thicken the filling as they set during baking.
Egg whites
Whipped into foam that forms the light, airy meringue topping.
Sugar
Sweetens the filling and stabilizes the whipped egg white foam.
Flour
Helps thicken the apple mixture so it sets rather than running.
Lemon juice
Adds acidity that brightens the apple flavor and balances sweetness.

The step that matters

Beating the egg whites to stiff peaks. Egg whites must be whipped until stiff peaks form, with sugar added gradually, so the foam holds its shape and browns well. Any trace of fat or yolk can prevent proper whipping.

Swap the apple

How well each one fits the dish's main ingredients (sauce, sugar, lemon, flour, egg):

  1. Raisinfits better

Fit is the average pairing score against sauce, sugar, lemon, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
