Escalloped Onions

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the outer skins from the onions.

  2. Boil the onions in water until nearly done, then drain them.

  3. Place the onions in an earthen baking dish.

  4. Layer with cracker crumbs, bits of butter, salt, and pepper.

  5. Pour milk over the mixture to nearly cover.

  6. Bake at 350°F (175°C) for half an hour or until done.
