Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add moisture and a soft, tender crumb to the dough.
Flour
Provides the structure that holds the dough together as it rises.
Butter
Adds fat for a tender texture and richer flavor.
Eggs
Bind the dough and add richness and structure.
Yeast
Produces gas that makes the dough rise and become light.

The step that matters

Knead the mixture well and let it rise. Kneading develops gluten so the dough can trap the gas yeast produces. Under-kneading or a rise in the wrong conditions leaves the rolls dense.

Swap the potato

How well each one fits the dish's main ingredients (flour, butter, egg, sugar):

  1. Chivefits better
  2. Leekfits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against flour, butter, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
