Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 300°F (150°C).

  2. Grind the sweet and bitter almonds together.

  3. In a bowl, mix the ground almonds, powdered sugar, lemon rind, lemon juice, and egg yolks.

  4. In a separate bowl, beat the egg whites until stiff peaks form, then fold them into the almond mixture.

  5. Add the cornstarch and baking powder, and gently mix until combined.

Bake

  1. Pour the batter into a prepared cake pan and bake for 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air that lifts the cake and keeps it light.
Egg yolks
Add richness and moisture and help bind the batter.
Sweet almonds
Provide the main body, nutty flavor, and tender crumb of the cake.
Powdered sugar
Sweetens the batter and dissolves easily into the ground almonds.
Baking powder
Releases gas in the batter, helping the cake rise.

The step that matters

Folding the beaten egg whites into the almond mixture. Beaten whites hold air that gives the cake its lift. Stirring too hard or too long deflates the foam, leaving a dense cake. Fold gently with a spatula, cutting through and turning the mixture, until no white streaks remain.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
