Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Wash the turkey and dry the inside.

  3. Mix the pounded crackers with enough boiling water to make a moderately thin mixture.

  4. Add the beaten eggs, salt, pepper, sage, and butter to the mixture.

  5. Fill the turkey with the dressing and sew up the openings.

  6. Tie the wings and legs close to the body and tuck the neck under the wing.

  7. Rub the outside of the turkey with coarse sea salt.

Roast and serve

  1. Roast the turkey for 3 to 4 hours, basting often.

  2. Serve with cranberry sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main meat, which firms and browns as it roasts.
Crackers
Soak up the boiling water to form a soft, moist stuffing base.
Eggs
Bind the dressing so it holds together when cooked.
Butter
Adds fat for richness and helps the surface brown.

The step that matters

Roast the turkey for 3 to 4 hours, basting often. Frequent basting keeps the surface moist and helps the skin brown evenly. Long roasting cooks the meat gradually, so the thickest parts need time to reach a safe, fully cooked state.

Swap the sage

How well each one fits the dish's main ingredients (turkey, egg, pepper, butter):

  1. Parsleyfits about as well
  2. Sagethe original
  3. Thymefits about as well
  4. Nutmegfits about as well

Fit is the average pairing score against turkey, egg, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
