Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Split peas
Break down during long simmering to thicken the soup and give it body.
Milk
Adds richness and a creamier mouthfeel to the finished soup.
Salt pork
Adds fat and savory depth to the broth as it simmers.

The step that matters

Boil steadily and stir often. Peas are dense and starchy, so they settle and scorch on the bottom of the pot. Frequent stirring and adding boiling water keep the soup from burning and maintain an even consistency.

Swap the peas

How well each one fits the dish's main ingredients (carrot, onion, pork, celery, milk):

  1. Beansfits better
  2. Sesamefits better
  3. Peanutfits better
  4. Peasthe original

Fit is the average pairing score against carrot, onion, pork, celery, milk. Candidates are from the same food group and used in at least 100 recipes.
