Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, salt, and sugar.

  3. Add milk to form a light dough.

  4. Roll the dough out thin.

Fill and shape

  1. Cut the dough into 4-inch squares.

  2. Place two peach halves in each square, then add 1 tablespoon sugar, a small piece of butter, and a little juice.

  3. Pinch the corners together.

Bake

  1. Place the dumplings in a pudding dish with edges underneath.

  2. Cover with boiling water, then add butter, sugar, and juice from the peaches.

  3. Bake for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the structure of the dough that wraps the peaches.
Baking powder
Releases gas during baking so the dough rises and becomes light.
Milk
Adds moisture so the flour and other dry ingredients form a dough.
Butter
Adds fat that enriches flavor and softens the crumb.
Sugar
Adds sweetness and helps the surface brown in the oven.
Peaches
Provide sweetness, juice, and fruit flavor that fills the dumplings.

The step that matters

Pinch the corners together. A loose seam lets the filling and juice escape while the dumplings bake, so the peaches and sweet liquid stay inside each dumpling.

Swap the peach

How well each one fits the dish's main ingredients (flour, sugar, milk, butter):
