Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 300°F (150°C).

  2. Grind the sweet and bitter almonds together.

  3. In a bowl, mix the ground almonds, powdered sugar, lemon rind, and egg yolks.

  4. In a separate bowl, beat the egg whites until stiff peaks form, then fold them into the almond mixture.

  5. Add the cornstarch and baking powder, and mix gently.

Bake

  1. Pour the batter into a greased cake pan and bake for 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites beaten to stiff peaks trap air, lifting the cake and giving it a light crumb.
Sweet almonds
Provide the bulk of the cake's body and rich, nutty flavor.
Powdered sugar
Sweetens the batter and adds tenderness as it dissolves into the almond mixture.
Cornstarch
Softens the crumb by diluting gluten-forming proteins, keeping the cake tender.
Baking powder
Releases gas in the oven, helping the cake rise and set.

The step that matters

Folding in the egg whites. Stiff whites hold the air that lifts the cake. Stirring them in vigorously knocks out air and makes the cake dense, so fold gently in large movements until no white streaks remain.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
