Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Forms the gel network that makes the liquid set into a firm jelly when chilled.
Sugar
Sweetens the jelly and helps give it a smooth, tender texture.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
Wine
Provides the main flavor and liquid base of the jelly.

The step that matters

Soak the gelatin until soft before adding it to the warm mixture. Gelatin must hydrate fully in cold water before it dissolves evenly into the warm liquid. Adding dry or clumped gelatin can leave grainy specks and weak setting.
