What each ingredient does

Peaches
Provide the fruit that softens and absorbs the spiced vinegar flavour.
Cold vinegar
Acts as the pickling liquid, adding acidity that preserves the fruit and sharpens its flavour.
Sugar
Balances the sharp acidity of the vinegar and adds sweetness.
Table mustard
Adds pungency and body to the pickling vinegar.

The step that matters

Ensure the peaches are well covered and tightly seal the jar.. Peaches exposed above the liquid can spoil and darken. Keeping the fruit fully submerged in acidic vinegar and sealing the jar limits contact with air and microbes during storage.
