Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Boil the potatoes until just done, then mash and beat them well.

  2. Stir in boiling milk, butter, and coarse sea salt to the mashed potatoes.

Shape and bake

  1. Wet your hands in hot water, then form the potato mixture into balls.

  2. Place the balls in a round pan, stacking one on top of the other.

  3. Bake in a 400°F (200°C) oven until light brown.

What each ingredient does

Potatoes
Provide the starchy base that becomes the body of the balls once mashed.
Boiling milk
Adds moisture and softness to the mashed potatoes, making them easier to shape.
Butter
Adds fat for richness and a smoother texture in the mash.
