The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a jelly as it cools, giving it structure.
Sugar
Adds sweetness and balances the sharpness of the lemon and wine.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Madeira wine
Adds aromatic depth and a rich, fortified wine flavour.

The step that matters

Gentle boil with skimming. A gentle boil dissolves the sugar and isinglass evenly without clouding the liquid. Skimming removes scum, which would otherwise make the finished jelly cloudy and less clear.

Swap the lemon

How well each one fits the dish's main ingredients (madeira wine, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Applefits about as well
  4. Lemonthe original

Fit is the average pairing score against madeira wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
