What each ingredient does

Fresh cod
Forms the flaky, mild-tasting main body of the dish once cooked.
Vinegar
Acidity in the soaking liquid brightens the fish and helps firm its surface.

The step that matters

Boiling the cod for 10 minutes. Fish protein sets at a relatively low temperature and turns dry and rubbery if overcooked. Boiling only until the flesh turns opaque and flakes keeps the slices moist and tender.

Swap the lemon

  2. Lemonthe original
  3. Avocadofits about as well
  4. Cherryfits less well
