Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast

  1. Preheat your oven to 400°F (200°C).

  2. Roast the saddle of lamb quickly, being careful not to scorch it.

  3. Baste with the fat and gravy that falls from the lamb.

  4. Cook for 1 hour and 45 minutes, or 2 hours if larger.

Serve

  1. Serve with mint sauce and cucumber sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Saddle of lamb
Forms the main joint of meat that is roasted and carved.
Fat for basting
Moistens the surface of the meat and helps it brown as it roasts.
Gravy for basting
Adds moisture and flavour to the surface of the meat during roasting.

The step that matters

Roast the saddle of lamb quickly, being careful not to scorch it.. High heat browns the surface and builds flavour, but sugars and proteins on the outside can burn before the centre cooks. Basting with fat and gravy helps protect the surface while it roasts.

Swap the mint

How well each one fits the dish's main ingredients (lamb, sauce, cucumber):

  1. Capersfits better
