Boil and serve

  1. Add the cauliflower to the boiling water and boil for 15 minutes for small cauliflowers or 20 minutes for large ones, skimming occasionally.

What each ingredient does

Cauliflower
Forms the main body of the dish and sets its texture once cooked through.
Melted butter
Adds richness and fat to the mild cauliflower when served.

The step that matters

Removing the cauliflower immediately once cooked. Cauliflower continues to soften from residual heat, so leaving it in the water past tenderness leads to mushy florets and a dull flavour.

Swap the cauliflower
