Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body and firm, tender texture of the pickle.
Vinegar
Provides the acidity that sharpens the flavor and helps preserve the pickle.
English mustard
Thickens the hot vinegar and adds sharp, pungent heat.
Turmeric
Gives the pickling liquid its yellow color and earthy aroma.
Sugar
Adds sweetness that balances the sharpness of the vinegar.
Salad oil
Adds fat that gives the sauce a smoother, rounder mouthfeel.

The step that matters

Stirring the mustard into the hot vinegar. Mustard powder clumps easily when it meets hot liquid. Moistening it with a little cold vinegar first makes a smooth paste, so it blends evenly and thickens the liquid without lumps.

Swap the turmeric
