What each ingredient does

Small white button onions
Provide the main vegetable that becomes crisp-tender and tangy once pickled.
Boiling brine
Salts the onions, drawing out moisture and firming their texture before pickling.
Vinegar
Provides the acidity that preserves the onions and gives them their sharp flavor.

The step that matters

Covering the onions with hot vinegar in sealed bottles. The onions must stay fully submerged in vinegar, since exposed pieces invite mold. Pouring the vinegar hot helps it penetrate and begin the pickling process. If mold appears, the record advises replacing the vinegar with fresh hot vinegar.

Swap the onion

How well each one fits the dish's main ingredients (egg, vinegar):

  1. Cucumberfits better
  2. Mustardfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against egg, vinegar. Candidates are from the same food group and used in at least 100 recipes.
