Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peas
Form the main body of the dish, and their starch and sugars give the cooked texture and sweetness.
Butter
Adds fat and richness, coating the peas and giving a smooth, silky mouthfeel.

The step that matters

Boil the peas only until tender. Peas go from bright green and tender to dull and mushy when overcooked, because prolonged heat breaks down their cell walls and pigments. Timing is what keeps them sweet and firm.

Swap the peas

How well each one fits the dish's main ingredients (sugar, butter, pepper):

  1. Almondfits better
  2. Chestnutfits better
  3. Walnutfits better
  4. Peasthe original

Fit is the average pairing score against sugar, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
