Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the mixture

  1. Combine mashed potatoes, egg yolks, cream, salt, and pepper in a saucepan.

  2. Stir constantly over medium heat until the mixture is light and hot.

  3. Remove from heat and gently fold in beaten egg whites.

Bake

  1. Transfer the mixture to a greased baking dish or small gem pans.

  2. Bake in a 400°F (200°C) oven until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg whites whipped in and folded give the puff its light, airy structure when baked.
Mashed potatoes
Form the body of the dish, providing bulk and a soft, tender texture.
Cream
Adds moisture and richness, keeping the mixture soft and smooth.
Butter
Adds fat for richness and helps the surface brown in the oven.

The step that matters

Folding in the egg whites. Egg whites hold air only when beaten to the right stiffness and folded in gently. Overmixing or stirring them in deflates the foam, so the puff will not rise as much when baked.

Swap the potato

How well each one fits the dish's main ingredients (cream, egg, butter, pepper):

  1. Potatothe original
