Lima Beans

Ingredients

Directions

Pack and seal

  1. Select perfectly sound lima beans and place them uncooked into jars.

  2. Fill the jars with cold water.

  3. Seal the jars as you would for asparagus, cooking them for the same length of time.

Prepare and fill the jars

  1. String the beans, cut them into several pieces, and boil them in water for 15 minutes.

  2. Prepare jars by filling them with warm water to heat them slightly.

  3. Empty the jars and quickly fill them with the boiled beans, then seal them as you would for fruit.

Lima beans
The main food being preserved; cooking softens them to a tender texture.
