Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the grape juice mixture into a firm, wobbly jelly as it cools.
Grapes
Add fruit flavour and texture to the set jelly.
Grape juice
Provides the main liquid and grape flavour of the jelly.
Sugar
Adds sweetness and balances the tartness of the lemon.
Lemon juice
Adds acidity that brightens the flavour of the jelly.

The step that matters

Set the mixture in ice water to thicken. Gelatine sets only as it cools, and it must be dissolved fully before cooling starts. Chilling too long can set the mixture unevenly or too firm before the grapes are folded in, so the grapes may not distribute well.

Swap the grape

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Grapethe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
