Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the mixture into a firm, sliceable structure as it cools.
Cream
Adds lightness and a smooth, rich texture to the set filling.
Grape juice
Provides the main flavour and sweetness, along with colour.
Lemon juice
Adds acidity that brightens the grape flavour and balances sweetness.
Lady fingers
Line the mold, forming the outer structure that holds the filling.

The step that matters

Stir over ice water only until the mixture thickens. Gelatine sets as it cools. If the mixture is chilled too far, it becomes stiff and lumpy, so the cream will not fold in evenly and the texture will be heavy rather than airy.

Swap the lemon
