What each ingredient does

Mashed potatoes
Form the body of the croquettes and give them a soft, tender interior.
Eggs
Bind the mixture together and form the coating that helps the crumbs stick.
Olive butter
Serves as the frying fat that browns the outside of the croquettes.

The step that matters

Cooking the mixture until it leaves the pan. Cooking drives off moisture from the potato and egg mixture, so it firms up enough to hold its shape when formed. Stopping too early leaves it soft and likely to fall apart during frying.

Swap the potato

How well each one fits the dish's main ingredients (egg, parsley, pepper, olive, butter):

  1. Capsicumfits better
