What each ingredient does

Eggs
Set into a delicate structure that gives the omelette its body when cooked.
Butter
Adds richness and coats the pan so the omelette releases cleanly and browns lightly.
Parsley
Contributes fresh, green flavour and aroma to the egg mixture.
Tarragon
Adds a distinct aromatic, slightly anise-like flavour to the eggs.

The step that matters

Stirring the eggs as they set. Eggs set quickly over high heat. Stirring the centre while it is still liquid forms soft curds, and rolling only once the surface is set keeps the omelette tender rather than tough or rubbery.

Swap the tarragon
