Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. In a bowl, cream together the butter and sugar with a wooden spoon until smooth.

  2. Add one egg, stir it in, then add the second egg and beat well.

  3. Mix in the stewed apples and mashed potatoes.

  4. Grate the lemon rind and add it to the mixture.

Bake and serve

  1. Butter a mold well, pour in the mixture, and bake at 350°F (175°C) for about 30 minutes.

  2. Once done, turn out onto a hot dish and serve with a suitable sauce.

What each ingredient does

Eggs
Bind the mixture and help it set into a firm, sliceable pudding when baked.
Butter
Adds richness and tenderness by coating flour-free starch and sugar during creaming.
Sugar
Sweetens the pudding and helps trap air when creamed with butter.
Stewed apples
Add moisture and fruity sweetness, keeping the pudding soft after baking.
Mashed potatoes
Add body and moisture, giving the pudding a dense, tender crumb.
Lemon rind
Adds bright aroma that balances the sweetness of the apples and sugar.

The step that matters

Beating in the eggs with the creamed butter and sugar. Adding eggs too quickly or cold can make the mixture curdle and lose its smooth, airy texture. Adding them gradually and beating well keeps the batter emulsified, so the pudding bakes evenly.

Swap the potato

How well each one fits the dish's main ingredients (egg, lemon, apple, butter, sugar):

  1. Asparagusfits better
  2. Sweet potatofits better
  3. Capsicumfits better
  4. Potatothe original

Fit is the average pairing score against egg, lemon, apple, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
