Potato Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Rub the baked potatoes through a sieve into a basin.

  2. Add the flour to the potatoes.

  3. Blanch and skin the almonds, then chop them finely along with the lemon peel.

  4. Separate the yolks and whites of the eggs; beat the yolks in a basin.

  5. Stir the beaten yolks into the potato mixture.

  6. Add the chopped almonds, lemon peel, and grated lemon rind; mix thoroughly.

  7. Gently fold in the stiffly beaten egg whites.

Bake and finish

  1. Turn the mixture into a buttered cake tin.

  2. Bake in a preheated oven at 350°F (175°C) for 30 to 40 minutes.

  3. Turn out onto a sieve to cool, then dust with sugar and ground cinnamon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter, while whipped whites add lightness and help the cake rise and set.
Baked potatoes
Provide moist, tender body so the cake has a soft, dense crumb.
Almonds
Add richness and a nutty texture to the crumb.
Flour
Adds structure that helps the cake hold its shape as it sets.
Sugar
Adds sweetness and helps the crust brown as it bakes.

The step that matters

Folding in the egg whites. Stiffly beaten whites trap air that gives lift. Stirring them vigorously knocks that air out, so the cake comes out flat and heavy. Fold gently, cutting through and turning the mixture, until no white streaks remain.

Swap the potato

How well each one fits the dish's main ingredients (flour, lemon, egg, almond, sugar, cinnamon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against flour, lemon, egg, almond, sugar, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
