Fat Livers in Cases

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Scald the livers for a few minutes to remove any bitterness.

  2. Lay them on a cloth to dry.

  3. Butter a tart dish and place the livers inside.

  4. Sprinkle the livers with pepper and coarse sea salt.

  5. Bake in a 400°F (200°C) oven for 10 minutes.

  6. Prepare a case the size of the dish, then place the liver and its juices inside.

  7. Cover with the case and return to the oven for a few minutes.
