What each ingredient does

Ground coffee
Provides the main coffee flavour and body as its solids dissolve into the hot water.
Raw egg
Optional; its proteins bind the fine grounds and help them settle, clearing the brew.

The step that matters

Let it boil for 10 minutes. Boiling extracts flavour from the grounds but also draws out bitterness the longer it runs. The egg needs the heat to bind the grounds, so the timing controls both clarity and taste.
