Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the main starchy paste that makes up the body of the puff.
Eggs
Bind the mashed potato into a paste that holds its shape when rolled.
Flour
Dusts the surface so the potato paste can be rolled without sticking.
Butter and lard
Fat for frying, which helps the puffs brown and turn golden.

The step that matters

Sealing the edges before frying. If the pinched edges are not sealed well, the filling can leak out into the hot fat and the puffs may burst or cook unevenly.

Swap the potato

How well each one fits the dish's main ingredients (meat, pepper, egg, flour, butter):

  1. Shallotfits better
  2. Asparagusfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against meat, pepper, egg, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
