Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 350°F (175°C).

  2. Prepare the pie crusts and bake them.

Make the custard

  1. In a bowl, mix the grated rind and juice of the lemon with the 3 eggs, saving the whites of 2 eggs.

  2. Add the sugar, flour, and butter to the lemon and egg mixture.

  3. Pour in the hot water and boil until thickened.

Assemble and top

  1. Once the crusts are baked, pour the custard into the crusts.

  2. Beat the reserved egg whites and spread them over the custard.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard as it sets, and the beaten whites form the topping.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon
Provides the sharp, aromatic flavor of the filling from its rind and juice.
Flour
Helps thicken the custard so it sets rather than staying runny.
Butter
Adds fat for a richer, smoother custard texture.

The step that matters

Boil the custard until thickened. The filling must reach a full boil to thicken properly; undercooked egg and flour mixtures stay thin and may not set when cooled.
