Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat your oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the milk and baking soda to the mixture and mix well.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Gently fold the egg whites into the butter mixture.

  6. Sift the cream of tartar with the flour and gradually add it to the batter.

  7. Add the lemon juice and mix until just combined.

  8. Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
