Neapolitan Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the butter and sugar until light and fluffy.

  3. Add the sweet milk and mix well.

  4. Gradually add the flour, egg whites, cream of tartar, and baking soda, mixing until smooth.

  5. Divide the batter in half. Color one half with pink food coloring.

  6. Pour the pink batter into jelly tins.

  7. In another bowl, cream together ¾ cup butter, 2 cups sugar, 1 cup milk, 3 cups flour, and the egg yolks.

  8. Add the cream of tartar and baking soda, mixing until smooth.

  9. Leave half of this batter yellow and mix the other half with the grated chocolate.

  10. Pour the yellow batter into jelly tins.

  11. Layer the cakes with icing made from the whisked egg whites, powdered sugar, and lemon juice.

  12. Start with the chocolate layer, then add the pink, white, and yellow layers.
