Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Wash the oysters under cold water in a colander and remove any shell pieces.

  3. Strain the oyster juice through a cloth and cut the oysters into pieces.

  4. In a bowl, mix the breadcrumbs with salt and pepper, then melt the butter and combine it with the crumbs.

Bake

  1. In a baking dish, layer the oysters with breadcrumbs in between, ensuring crumbs cover the bottom and top.

  2. Pour the oyster juice over the layers and bake for 15 minutes.

What each ingredient does

Oysters
Form the main body of the dish and provide its briny, savoury flavour.
Breadcrumbs
Absorb moisture and form a crisp, golden crust over the layers.
Butter
Coats the crumbs so they brown evenly and add richness.
Oyster juice
Adds moisture and concentrated oyster flavour as the dish bakes.

The step that matters

Layering the oysters with crumbs. Crumbs covering the bottom and top, and between the oysters, keep the oysters from drying out and help form an even crust while the juice cooks into the dish.
