Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the dessert and helps balance the tartness of the lemon juice.
Cornstarch
Thickens the hot liquid into a smooth, set mixture as it cooks.
Egg white
Beaten into foam, it gives the dessert its light, snowy texture.
Lemon juice
Adds acidity and bright lemon flavor to the dessert.

The step that matters

Pouring the lemon mixture over the beaten egg white. Pouring slowly and gently helps keep the egg white foam from deflating, which keeps the dessert light instead of dense.
