Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Strawberry Shortcake
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
In a bowl, beat the egg yolk, then add sugar, lemon juice, and water.
Sift the flour with baking powder and mix it into the egg mixture.
Gently fold in the egg white.
Pour the batter into a shallow pan and bake until golden.
Once cool, split the cake and fill it with seven slightly crushed strawberries.
To make the meringue, beat the egg white until stiff and gradually add powdered sugar.
Spread the meringue on top of the cake and garnish with the remaining strawberries.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
