Rhubarb to Preserve

Ingredients

Directions

Prepare and cook

  1. Peel and cut the rhubarb into 2-inch pieces.

  2. Combine rhubarb, sugar, lemon rind, and lemon juice in a preserving kettle.

  3. Simmer gently until the rhubarb is soft.

Jar and seal

  1. Carefully remove the rhubarb with a silver spoon and place it into jars.

  2. Boil the syrup for 1 hour to ensure it keeps well.

  3. Pour the syrup over the fruit in the jars.

  4. When cold, cover with a paper soaked in brandy and tie down with a bladder to exclude air.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the fruit body and tart flavour that the preserve is built around.
White sugar
Sweetens the fruit and, at high concentration, helps preserve it by binding water.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Lemon rind
Contributes aromatic citrus oils to the syrup.

The step that matters

Simmer gently until the rhubarb is soft. Vigorous boiling breaks the rhubarb pieces down into mush, while gentle simmering softens them and keeps them whole for jarring.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):
