Why it works: Allspice and ginger match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,620 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pickled Sturgeon

Ingredients

Directions

Prepare the fish

  1. Wash the sturgeon, changing the water several times.

  2. Soak the sturgeon in salt water for 24 hours.

  3. Pour off the salt water and soak in fresh salt water for another 12 hours.

Cook

  1. Tie the sturgeon with a cord and boil in weak salt water until a straw can be easily inserted.

  2. Skim off any oil during boiling.

  3. Strain the boiling liquid and return it to the pot.

  4. Add allspice, black pepper, and ginger, crushed slightly in a mortar, and boil briefly.

  5. Add vinegar to the boiling liquid to taste.

Pickle and store

  1. Once the liquid is cool, submerge the sturgeon in it.

  2. If there isn't enough liquid to cover the sturgeon, add more vinegar.

  3. Cover the vessel tightly and store in a cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sturgeon
Is the main protein that is firmed by brining and cooked before pickling.
Coarse sea salt
Draws out water and seasons the fish through the salt soaks and brine.
Vinegar
Adds acidity that preserves the fish and gives the pickling liquid its sharp flavour.

The step that matters

Cooling before submerging the sturgeon. Pouring the fish into hot liquid can cook its surface further and make it soft or uneven. Letting the liquid cool first keeps the texture firm, and the fish must stay fully covered so no part spoils.

Swap the ginger

How well each one fits the dish's main ingredients (sturgeon, allspice, pepper, vinegar):

  1. Clovefits better
  2. Thymefits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against sturgeon, allspice, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
