Rhubarb for Pies

Ingredients

Directions

  1. Remove the thin skin from the rhubarb and cut it into pieces the size of a gooseberry.

  2. Stir in sugar to taste, using about ¾ pound of sugar for 1 pound of rhubarb.

  3. Add the juice of one fresh lemon.

  4. Place the rhubarb mixture on the pie crust without stewing it first, as the sugar will extract enough juice.
