Why it works: Okra and turnip share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 53 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Oohmon Soup

Ingredients

Directions

  1. Cut the meat into small pieces and crack the bones.

  2. Place the meat and bones in a pot and cover with enough water to stew them until tender.

  3. Stew slowly, adding boiling water as needed, and skim off any grease.

  4. Remove any meat you want to save for later before adding the vegetables.

  5. Chop the cooked vegetables and add them to the pot.

  6. For a richer flavor, add a few spoonfuls of drain butter or dissolve some gelatine if needed.

  7. Add a bouquet of sweet herbs for flavor.

  8. Serve with wine or ketchup on the side, and offer macaroni or vermicelli as a substitute for okra.
