Salmon Amd Salad

Ingredients

Directions

  1. Trim the salmon neatly and remove the eyes, placing a pinch of salt in their place.

  2. Sprinkle a handful or two of brown sugar inside the salmon, followed by the same amount of coarse sea salt.

  3. Lay the salmon on a flat board, skin side up, cover with a cloth, and let it cure in a cool, dry place for 24 to 36 hours.

  4. For the salad, boil the cauliflower until two-thirds done, then let it cool and break it into pieces.

  5. Season the cauliflower with salt and pepper, and serve it alongside the salmon.

  6. To cook the salmon, cut it into slices, wrap each slice in paper, and boil in water with vinegar and bay leaves until done.

  7. Drain the salmon and let it cool on a cloth before packing it in a container with pickle, ensuring it is fully submerged.
