Ingredients

Directions

Prepare the lobster

  1. Boil the lobster in a pot of boiling water with a handful of salt for 30 minutes.

  2. Remove the lobster and wipe off any foam, then rub it with a little sweet oil.

  3. Once cooled, break off the claws and crack the shell without disturbing the meat.

  4. Place the lobster body upright on a dish, arranging the claws and tail around it.

Make the salad and egg sauce

  1. Chop the salad and mix with melted butter, mustard, and vinegar; season with salt and pepper.

  2. Spread the salad mixture on a flat dish.

  3. Beat the eggs and mix with vinegar, then heat on the stove while stirring until thickened.

  4. Once cooled, spread the egg mixture over the lobster.

What each ingredient does

Lobster
Forms the main protein, with tender meat that is set by the initial boiling.
Eggs
Thicken into a custard-like sauce when heated, giving the dish a creamy coating.
Melted butter
Adds fat and richness, coating the salad leaves with a smooth texture.
Mustard
Adds sharp, pungent flavour that balances the richness of butter and eggs.
Salad
Provides a fresh, crisp base that carries the dressing.

The step that matters

Heating the egg and vinegar mixture. Eggs thicken when heated gently while stirred; if the heat is too high or stirring stops, they can scramble and turn lumpy instead of smooth and creamy.

Swap the mustard

How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, egg):
