Tapioca Pudding

Why it works: Nutmeg and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it soaks and thickens the liquid into a soft, spoonable pudding.
Tart apples
Provide the fruit base, softening as they bake and adding acidity to balance the sweetness.
Melted butter
Adds richness and fat, giving the pudding a smoother mouthfeel.

The step that matters

Soak the tapioca without cooking it. Tapioca must hydrate for several hours in warm water so its starch swells fully. Skipping or shortening the soak leaves the pudding gritty and unevenly set during baking.

Swap the apple

How well each one fits the dish's main ingredients (sugar, nutmeg, lemon, butter, milk):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against sugar, nutmeg, lemon, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
