Fine Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Heat the oven to 300°F (150°C).

  2. In a bowl, combine the sugar and pounded almonds.

  3. Add a little orange‑flower water while pounding the almonds to prevent oiling.

  4. Mix in the grated lemon rind and enough lemon juice to achieve a sharp taste.

Bake and shape

  1. Spread the mixture in a glass dish in the oven.

  2. Stir often to prevent candying.

  3. Once slightly dry, drop the mixture onto paper in small cakes to harden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Provides sweetness and, as it dries and cooks, helps the mixture set into a firm cake.
Sweet almonds
Supply the main body, fat and almond flavour of the cake.
Lemon juice
Adds acidity that sharpens the flavour and balances the sweetness.

The step that matters

Stir often in the oven. Sugar left still in hot, dry heat can melt and recrystallise into a hard candy-like layer, so frequent stirring keeps the mixture evenly dry and prevents candying.

Swap the almond

How well each one fits the dish's main ingredients (sugar, orange, lemon):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chickpeafits less well
  4. Chestnutfits less well

Fit is the average pairing score against sugar, orange, lemon. Candidates are from the same food group and used in at least 100 recipes.
